I used to think my Dad’s mince pies were pretty good. That was until I tried making almond paste mince pies using The Boy Who Bakes, Edd Kimber’s recipe. Boy was I hooked!
Below is my variation on this great recipe tweaked to my tastes, which I think makes it better!
There are three essential component parts to these almond paste mince pies:
- The pastry – sweet with almonds, recipe below.
- The mincemeat – homemade, we follow a variation of Delia’s recipe
- Almond paste – again homemade, recipe below.
